leftover chicken and stuffing?
I made a roasted chicken for dinner, and we have a ton of meat leftover (mostly white meat, as I'm the only one of the 3 of us that eats that..) Also, there is a ton of stuffing (again, the only one who at it!) leftover. They like stuffing, I guess they just weren't in the mood. So what can I do with leftover chicken and stuffing? I don't just want to eat it again separate, it'd be nice to do something with it. Like a casserole or something..any ideas? Thanks.

- Press the left over stuffing into a greased pie plate. Chop up the chicken meat and combine with some mixed vegetables (cooked) and some chicken gravy. Pour into the stuffing pie shell and top with mashed potatoes with cheese mixed into them. Bake until potatoes and filling are hot and cheese melts.
- Yes, you can make a casserole, assuming it has been stored safely. Dice the chicken meat into 1/2" cubes, & place in casserole dish. Make a sauce with cream of chicken soup & diced vegetables. You can use frozen mixed vegetables or sliced carrots, peas, corn, etc. If you don't have cream of chicken, mushroom or celery will work. Or make a white sauce; 2 tbsp each of oil & flour mix into roux/paste. Heat with 1 cup of milk & whisk over medium heat until thickened. Top with stuffing & bake at 400F until bubbly & golden browned.
