can i use chicken and broccoli flavor Rice Sides, chicken, and peas in a casserole?

1. I don't see why not. Sounds good too.
2. As long as you like them, why not? It will actually save you tons of time in preparation and make the casserole much tastier because of all the flavoring in the Rice Sides. I make casserole that way quite often. It's a big time saver.
