What can I make for dinner with these ingredients?
I have some lean ground beef, white rice, peas and carrots, corn. I have no cream of chicken or no cream of anything soup for that matter. I have chicken broth, some shredded mexican. I might have a few other things laying around that might go with that...a casserole of some sort perhaps? Any ideas?? Thanks - oh, I have some stewed and diced tomatoes.

- Brown the beef then add then tomatoes peas and carrots on low heat. Make the rice according to the package. Mix all of them together and enjoy.
- if you have tortilla and the right seasonings you can make a a decent taco or burrito from the ground beef, white rice, corn, diced tomatoes, and the shredded mexican (whatever that is). If you have lettuce, you can make a taco salad.

- I would make a taco bake... You can pre cook the rice, adding the diced tomatoes and chicken broth the liquid base and if you have some taco seasoning or cumin, add that too to make mexican rice. Layer the bottom of a casserole dish with some corn tortillas, brown the ground beef and layer on top, add another layer of tortillas, top with beans (if you have them) and rice, top with mexican cheese... (assuming the shredded mexican "whatever" meant cheese)... bake in the oven at 350 for an hour. Serve with salsa and sour cream and steamed veggies on the side. That's what I would do. If you have any taco sauce or extra salsa, green or red, you can add that on top of the ground beef before proceeding with the layering... just to add more flavor. Good luck!
- You should make some sort of fried rice. Just put chunks of the meat in a skillet, mix it with a few seasonings. In a wok (or skillet) mix some soy sauce/chinese sauce, the rice (cooked in the broth) and all of the veggies, add the beef, and DONE!!!
- Cook out the beef, drain if you like. Cook the rice in chicken broth, drain. Mix beef and rice and corn (drained) and tomatoes and depending on how much you have of the meat mixture, an egg or two beaten added to mixture, if using egg make sure it is mixed in very well. (If you have spices, spice to taste with onion powder, a little chili powder or cayenne pepper, salt and pepper). Top with shredded cheese, bake in oven 350 until heated through and cheese is melted, keep an eye that cheese doesn't burn. Add onion to beef when cooking it if you have them. Also, if you have corn chips or tortillas, crumbled them on top of the meat mixture and then the cheese. Or you can line the casserole dish with the chips/tortillas. GOOD LUCK!
