What are some good, easy dinner side-dishes?
Normally we eat some sort of chicken recipe for dinner. We're tired of our usual sides (broccoli-cheese casserole, steamed veggies, rolls, mashed potatoes, salad, toast, etc.). What are some yummy, EASY sides that pretty-much don't require a recipe or extremely long prep-time? I'm just asking for some ideas! I'd also like ideas on side-dishes that can go with our Mexican Food Night, when we eat things like tacos and stuff (: Thanks!

- For the chicken, brown or jasmine rice combined with any veg. Do it in the microwave-so easy. Season the rice dish so it works with your particular chicken recipe.When in doubt, rosemary, thyme or poultry seasoning are a good choice with chicken. Mexican? Easy prep spanish rice (packaged) or good old refried beans, spice it up to your taste. Put shredded cheddar on the beans, and a little cilantro on the rice if you want to get fancy.
- Boil your favorite pasta shape (for time stated on pkg) and toss w/ butter, S&P, maybe a little lemon jc. Fresh parsley is good, so is a handful of frozen green peas tossed in the colander when you go to drain them. Oh, also toss w/ pesto from a jar and a bit of the pasta cooking water to make a sauce. Dice up potatoes (keep skin on the thinner skinned ones) and boil 10 min. Let rest in colander 10 min under clean dish towel. Then toss w/ butter and S&P, maybe some roasted garlic from the jar, or fresh parsley. Make rice in flavored stock. When done, toss in a handful of frozen green peas, toasted nuts, and a bit of butter to make a pilaf. You can alway sserve whole baked potatoes. Scrub clean, poke w/ fork, and nuke 4 on high for about 12 min. You'll hear them singing when they're done. You can also make casseroles in 6-serving containers. Bake one that night, freeze one for another night. You can do all sorts of pasta, rice, hash brown, corn, or other veggies casseroles.
