- The secret imo to chicken wings is to dry them out before coating and deep frying. Place the chicken wings on a cookie sheet and bake them at 350 until they dry out a bit then coat them with a hot sauce of your choice and deep fry them until cooked in center.

Add chicken wings, cover, and marinate in the refrigerator for at least 2 hours, stirring occasionally. Preheat grill for high heat. Drain marinade from chicken into a small saucepan. Bring to a boil, and simmer for 5 minutes. Set aside for basting. Lightly oil the grill grate. Grill wings for 10 to 15 minutes, or until juices run clear. Turn frequently and baste with the marinade during the last 5 minutes.

Wings into the wash and then rolled in the dry coating. Fridge the wings for about 45 minutes for the coating to set. Grill as you would any poultry basting with your favorite hot sauce. You can also double the spices in the recipe for a spicier wing.
- Alton Brown did a whole show on chicken wings. His technique was important. He steams the wings for 10 minutes in a pot with a steamer basket (I turn mine upside-down) to render some of the fat off of them. Then he lets them cool for an hour then roasts them in a 425 degree oven turning them once. This produces a crispy skin. Then he tosses the wings in a large bowl with butter and hot sauce. Others have used a shake (onion powder, garlic powder, paprika, etc.) on the wings before roasting, then add sauce.
