Any suggestions on a good Mexican inspired casserole?
I'd like for it to contain brown rice, diced tomatoes, green chili's, any variety of cheese, black beans, corn, etc. and maybe some tortilla strips for crunch. I don't eat meat but wouldn't mind throwing in ground beef or chicken substitutes.

- That sounds like a good recipe there, just brown your meat and season it, then layer everything in a casserole dish sprayed with cooking spray. Bake at 375 for about 35-45 minutes or until bubbly. I would add some extra cheese about 10-15 mins before the end of cooking, and then hold off on adding any chips until the end and sprinkling them on either at the end maybe 5 mins before end of cooking. Adding them into the casserole will only make them soggy. Hope it turns out good, sounds yummy!
- You've got most of the ingredients for a great casserole! I would mix the brown rice, diced tomatoes and chilies together. I would also mix the corn and black beans together (maybe add some cumin and chili powder to them or salsa if you have it. Then layer as follows: tortilla chips on the bottom, then the bean/corn mixture, then the rice/tomato/chilies mixture. Top with more tortilla chips and then some shredded cheese (jack, cheddar or a combo of both would be good. Bake at 350 for about 20 minutes or so, until hot. If you have the ground beef substitute, you could add it in as another layer. When it comes out of the oven, top it with shredded lettuce and guacamole if you have any. YUM!
- You have a good idea there. I wanted to suggest an additional idea as well. It doesn't include everything you said but it would taste good too. You could make a Mexican lasagna. Instead of meat use refried beans. Use Montery Jack and Mozzerella cheeses. Add spicy peppers and salsa and beans.

- I make a soft taco casserole using corn tortillas and layer my ingredients sort of like a lasagna. All the ingredients you want should work fine. I would ass taco seasoning to the brown rice before layering.
