Can you suggest a recipe for a chicken casserole for one?
I really want to make a chicken casserole for my tea tonight but I'm on my own so all the recipes I've looked are no good as they are to feed between 4-6 people. I'm also looking for a simple recipe, nothing fancy with cous cous or wine or whatever just a simple one with stock and vegetables to serve one person. Could you suggest anything (with cooking times too?) Thanks! xxx

- hmm some chicken diced. sauteed onions, garlic. a nice garlic sauce?, with some green beans, broccoli sweetcorn maybe?, peas, corn on the cob on the side? home made chips or some new baby potatoes, you can get some from tescos or sainsburys in a sealable bag, with butter and herbs, you can put them in the microwave for about 4 mins. make the casserole in a small tray so maybe you can eat it tommorow aswell? or take it to work for lunch hope you like my idea :) im hungry.

- Purchase a good-sized breast of chicken (6-8 ozs.) Using mallet, pound out to equal thickness, about 1/4 in. Salt, pepper and garllic powder if; dredge in flour, then egg, then flour again and set aside to dry so coating will adhere. Now, wash 1/2 c. rice and drain. Mince 2 T. onion and 1/2 minced garlic clove and 3 T. minced mushrooms, and saute in 2 T. butter for 6-7 minutes. Add rice, stir to coat well, and saute until light brown. Add 1 cup chicken broth (canned is fine for this). bring to boil, cover, and turn heat to very low. It will take a grand total of about 20 minutes, during which time you melt a bit of butter with a bit of oil and saute your chicken breast for a total of 15 minutes, at which point you add a few T. white wine and swirl it around. Juices from chix. should run clear. When rice is tender, turn out onto plate. Slice chicken thinly and serve atop rice with pan juices. A squeeze of lemon is a great finish. bon apetit. Can be doubled, tripled, whatever. You can also add other veg to rice; diced zucchini, chopped artichoke hearts, peas, cubed carrots, diced tomato; whatever suits your taste.
- You could make an individual chicken pot pie. Or chicken ala king could almost be a casserole.
- If you have a freezer follow a recipe for 4-6 and freeze the remainder in 250g. margarine tubs for future meals.

MEAT CASSEROLE Serves 2 INGREDIENTS 375g of beef, lamb or pork, chicken or turkey 2 carrots 2 potatoes ½ an onion 1 tablespoon of oil 200g (½ a 400g tin) of plum tomatoes 250ml of water 1 beef or chicken stock cube 1 teaspoon of parsley Ground pepper to taste DEFROSTING If you are using frozen chicken, make sure that it is completely defrosted before use. Leave it in the fridge overnight, or out of the fridge and covered for 6 hours. METHOD Chop the meat into 2 cm (1 inch) pieces. Peel the carrots and cut them into slices. Peel the potatoes and chop them into 2 cm (1 inch) pieces. Peel the onion, cut it in half, chop one half into tiny pieces and save the other half. Put the oil in a frying pan on a moderate heat. Add the meat and onion, and fry them for about 5 minutes until the meat is thoroughly cooked with no pink bits. Stir frequently to stop it sticking. Open the tin of tomatoes. Put the juice into a bowl. Chop the tomatoes while they are still in the can (it’s easier than chasing them around the bowl). Put the chopped tomatoes into the bowl. Use half and save the other half. Put the meat and onion, carrots, potatoes, tomatoes, water, stock cube and parsley into a large ovenproof dish with a lid. Stir thoroughly. Put the lid on the dish. Cook in a preheated oven at 150°C, 300°F, gas mark 2 for 2 hours. Check the liquid level from time to time and top it up if it starts to dry out. Season with the pepper. ADDITIONS & ALTERATIONS Add some dumplings. Use the frozen ones, according to the instructions on the packet. Serve with a green vegetable, or add 100g of fresh, frozen or tinned peas 15 minutes before the end of cooking. TIPS Plum tomatoes can be used either whole or chopped. It is difficult to stick chopped tomatoes back together again if you need to use them whole.
