  1. Well chicken on the grill is tricky because you can under-cook it but most of the time people over cook it and then its dry and terrible. The rule of thumb with wing sauce is that you toss the chicken in the sauce hot off the grill, my suggestion would be to pound your chicken to flatten it out a bit and grill the chicken for 6 minutes on each side then pierce with a fork and if the juices run clear they are done. Remove the chicken and I would cube your piece up and toss it in the buffalo sauce. Sounds good!
  2. The grill is how I do all my wings all the time . Baste them frequently , as they will cook faster on the grill . The grill is what I use for my meatballs as well , no frying or baking and the taste is awesome ! Sorry I did not read your whole question so I will add this . Marinade hers in some citrus and use it to baste with will grilling . A combination of : orange juice lemon juice rosemary S&P paprika spalsh of honey Marinade for a few hours then grill about 6 min. per side depending on thickness and if you have your grill nice and hot and cover it . Always check by sticking an fork into it to see if the juices run clear .
