Anyone Know a good "HOT" Hot wings sauce and yummy Fried Chicken Recipes. Will Appreciate serious and detailed answers.

- Fried chicken is easy Salt and pepper the chicken pieces liberally. Dredge them in seasoned flour. Dip them into a mixture of buttermilk and a beaten egg. Dredge them in seasoned flour again (flour, salt, pepper, seasoned salt.) Let the pieces set for about 10 minutes for the coating to 'gel'. Then dip them in the flour again. Fry in VERY hot oil (your choice: vegetable, canola, corn, lard -- I prefer canola) until the coating is a deep golden brown color, then flip the pieces over. Place on a rack above a shallow pan in the oven for 20 minutes on low heat.
- Southern- Style Buttermilk Fried Chicken Ingredients * 2 cups buttermilk * 1 tablespoon Dijon mustard * 1 teaspoon salt * 1 teaspoon ground black pepper * 1 teaspoon cayenne pepper * 1 whole chicken, cut into pieces * 2 cups all-purpose flour * 1 tablespoon baking powder * 1 tablespoon garlic powder * 1 tablespoon onion powder * 5 cups vegetable oil for frying Directions 1. Whisk together buttermilk, mustard, salt and pepper, and cayenne in a bowl, and pour into a resealable plastic bag. Add the chicken pieces, coat with the marinade, squeeze out excess air, and seal the bag. Marinate in the refrigerator for 2 to 8 hours. 2. When you are ready to cook the chicken, combine the flour, baking powder, garlic powder, and onion powder in the other plastic bag. Shake to mix thoroughly. Transfer one marinated chicken piece at a time into the dry ingredient bag, and shake well to ensure complete coverage. After all chicken pieces are coated, repeat the process by dipping them in the buttermilk marinade and shaking in the dry coating again. 3. Heat oil in a large frying pan over medium-high heat, making sure not to burn the oil. When oil is hot, fry chicken in batches until golden brown and juices run clear, turning chicken to brown evenly. SPICY GLAZED WING SAUCE Ingredients: 1 lb brown sugar 2 cups Frank's Red Hot sauce or any other Buffalo sauce 1/2 cup melted butter Directions: It tastes so sweet and you can hardly pick up a hint of heat from the hot sauce. Many folks mistakenly call it honey BBQ; but now you know the secret. Combine all ingredients and simmer over low heat or microwave. The sauce will turn from red to brown and thicken as the sugar caramelizes. This sauce will keep for months refrigerated. :)HUGS(:
