how to get crispy baked chicken wings?
i make these delicious chicken wings that cook for 2 hours in the oven they marinate but i dont like the skin..i love the flavor but not chewing the skin. is there a way to get a crispy skin and still have the chicken cook in the sauce for 2 hours?

The key to getting the skin crispy is to first steam the wings, then allow them to dry in the refrigerator. Then they are baked in the oven, and coated with the sauce after. You can find the recipe and probably the video of the show on the above link.
- You want to pat your wings dry before you bake them, and you may want to let them air dry in the fridge for a couple hours too. The cool fridge will help dry the skin a little bit. After you cook them, you can put a sauce on them.
- To make anything crispy, the best thing to do is follow the instructions, but braise whatever you're cooking with a little olive oil and increase the recommended heat by 50 degrees (for 5 - 15 minutes, depending on what you're cooking). This will cause chicken skin, veggies... whatever you're cooking... to shrivel and crisp up a little bit. Also, if you're covering it, make sure you take the cover off. It traps in the moisture.
- I understand your problem. Try this: I buy the wings in the large packages and cut off the tips and then cut off the drumsticks so you have the two main pieces. Trim the large fatty part and skin from the drums and the excess fat and skin from the edges of the other part (I don't know what you call that part but it's the thinner flatter piece). Depending on how many wings your baking, place the wings in a bowl and add a little olive or veggie oil and mix well with your hands. Cover a cookie sheet with foil (the non-stick foil works best) and place wing pieces on the cookie sheet, skin side down. Bake at 400 Deg. for 45 min. to 1 hr. The skin will be crispy. Remove the wings and place in a baggie or bowl and add your sauce. Mix well and serve immediately. Your problem seams to be, that if you bake your wings and then cook in a sauce, you will never get a crispy skin. Hope this helps!
