What can I do to give chicken wings a "mexican" or "southwestern" flavor?

I am planning to cook chicken wings tonight and want to know how to add a “mexican” or “southwestern” flair to them. I was thinking of maybe sauteeing some onion and adding some taco seasoning to the wings, but I’m not sure if I should cook them on top of the stove (smother them) or in the oven (bake them). I have onion, taco seasoning, cilantro, cumin, chili powder and many other spices at home. Any recipes or ideas would be appreciated.   1. This is a fantastic, do ahead chicken wing recipe. Screaming with flavors of the southwest! These chicken wings are coated with hints of smoky pepper, cilantro, and lime then served with a well-balanced, tasty, warm black bean dip and homemade flour tortilla chips. Southwest Chicken Wings 10 TB of butter, melted 6 TB hot pepper sauce (Tabasco or Crystal types) 3 tsp ground cumin 2 heaping tsp chipotle chile pepper 1/4 cup fresh cilantro, finely chopped 6 TB fresh lime juice (about 6 small limes) Mix well. Set aside for about an hour or so, then refrigerate overnight. This sauce is quite strong straightaway but mellows out and is just right once it is incorporated the next day. You can prepare the wings a day ahead or on the day you wish to serve them. I recommend the following: Preheat your oven to 375 degrees. Place about 4 pounds of chicken wing pieces in a large rectangular oven-proof baking dish. Pile them up - it doesn’t matter as these will bake up until almost tender while the juices self-baste. Place the wings in the oven for about 30 minutes or so. No need to disturb them during the cooking process. You want them cooked, but not so tender they fall apart. Transfer to a few plates or a cookie sheet. Allow to cool. Refrigerate until the next day. Do not apply sauce at this time.
  2. Ideally, I would marinate them overnight in Goya Mojo Crillolo sauce(in most Hispanic sections) then bake them. If you have some Italian Dressing, you can marinate them in that for an hour or so(use a plastic bag) then add some cumin and chili powder into it.

  4. hello,marinate them for a few hours in any of the spices that you mentioned.i would use fresh cilantro,lime juice,crushed chipotle peppers,little garlic,cumin(not to much as this is a very dominating spice),clove.salt and pepper refridgerate for at least 2 hours,the longer the better,preheat your oven to 400 degrees.place a sturdy pan on your range and get it smoking,add some oil and gently place all you wings in the hot oil,this will sear them,locking all the juices in.once browned all over transfer to you oven and cook for a bout 6 minutes.serve as is or with your favourite sauce. enjoy
