a one dish baked meal. Looking for new and exciting recipes from others. What is your favorite baked chicken recipe. I don't really want any recipes using cream of mushroom since that is loaded with salt. Something easy and healthy.

- Spicy bruscetta chicken bake Ingredients 1 1/2 lb. boneless skinless chicken breast cut into bite-size pieces 1 cup shredded pepper jack cheese 1 14 1/2 ounce can diced fire-roasted tomatoes 1 6 ounce package Stove Top for chicken 1/2 cup water 3 cloves garlic, minced 1 tablespoon Italian seasoning, Dell'Aple recommended Big pinch kosher salt Pinch red pepper flakes Method Heat oven to 350 and spray a 9 x 13 pan with Pam Lay the chicken in an even layer in the bottom of the pan and sprinkle with the cheese. Mix tomatoes, stuffing mix, water, garlic, and Italian seasoning, salt, and red pepper flakes together until stuffing mix is moistened. Mound the stuffing mixture on top of the chicken and the cheese in an even layer. Bake 30 minutes or just to the point when the chicken turns opaque.
- Chicken Almond Casserole 4 tablespoons butter 4 tablespoons flour 1/2 teaspoon paprika dash pepper 1 cup hot water 2 teaspoons instant chicken bouillon granules or base 1 cup whole milk salt, to taste 1 tablespoon chopped pimiento 1/2 cup slivered blanched almonds, 1 tablespoon reserved for topping 1 can (4 ounces) sliced mushrooms, drained 2 cups cooked rice 2 cups cubed cooked chicken 1/2 cup buttered bread crumbs Melt butter in a large saucepan; blend in flour, pepper and paprika until smooth and bubbly. Dissolve chicken bouillon or base in hot water; gradually add to flour mixture with the milk. Cook over low heat, stirring constantly, until smooth and thickened. Add salt to taste. Add pimiento, almonds, mushrooms, rice, and chicken. Transfer mixture to a lightly buttered 3-quart casserole. Top with reserved slivered almonds and bread crumbs. Bake at 350° for 30 minutes. Serves 6.
- This is one of my very favorites........ Easy Garlic Chicken 1 1/2 boneless skinless chicken breasts halves 1/4 cup butter 6 cloves garlic, crushed 2 cups seasoned dry bread crumbs Melt butter with garlic, dip chicken pieces in the butter/garlic mixture then coat completely with bread crumbs. Place on a lightly greased 9x13 inch baking pan. combine any leftover sauce with bread crumbs and spoon over the chicken.......Bake at 375 degrees for 45 min to 60 min. ** I cut this in half for my hubby and me....I have also subbed the crushed garlic for about four T of garlic powder, you will just have to do the garlic as you like. My preference to the bread crumbs is Panko of course since it is so crunchy. - Hi. We always use Lilydale free range chicken and they have alot of great healthy recipes on their website (http://www.freerangechicken.com.au/recipes/healthy.html.) One of our favourites is the BBQ Chicken Fillets in Soy, Ginger & Honey. Ingredients 600g Lilydale Skinless Breast Fillets Marinade 2 tablespoons soy sauce 1 teaspoon chopped garlic 1/2 cup pineapple juice 1/2 teaspoon grated fresh ginger Good pinch of corriander Good pinch of cumin 1/2 cup sherry or mirin 1 tablespoon honey Method 1 To make marinade, mix all ingredients in a bowl. A little red chilli may be added to the marinade to add some spice. Pour marinade over chicken breast and marinade for no more than three hours in the fridge. 2 Strain off marinade and bring the marinade to boil in a saucepan. Reduce heat until it haves in quantity. 3 BBQ fillets on hot BBQ, continually basting with marinade. Be careful not to overcook the breast. 4 To make summer salad, combine all ingredients in a bowl and mix well. 5 Combine dressing ingredients and sprinkle over the salad. Serve on the side of BBQ chicken fillets. 6 Serve chicken with steamed rice and brushs with reduced marinade. Garnish with chopped spring onions and seasame seeds.
- Here is one of my favourite chicken recipes. It's always a big hit and leftovers keep well. I hope you try it. *****Maple Mustard-Glazed Chicken***** 4 boneless, skinless chicken breasts, pounded flat 6 Tablespoons Dijon mustard 4 Tablespoons maple syrup 2 Tablespoons whole-grain mustard 2 Tablespoons brown sugar 1/2 teaspoon dried thyme 2 eggs 1/2 cup all-purpose flour 1 cup seasoned bread crumbs 1 Tablespoon olive oil 1 Tablespoon water 1/2 teaspoon salt 1/4 teaspoon pepper In a small bowl, make the glaze by combining, Dijon mustard, maple syrup, whole-grain mustard, brown sugar dried thyme. Set aside. Mix flour with salt and pepper in a shallow plate. On another plate combine eggs with water. Lastly, place seasoned bread crumbs on a third plate. Dip the chicken into the flour, shaking off any excess. Next, dip into the egg mixture and lastly into the breadcrumbs, making sure to coat completely. Heat olive oil in a large, nonstick skillet over medium heat. Cook the chicken breasts for 2 minutes on each side, just until browned. Place the chicken on a baking sheet covered in parchment paper. Thickly brush the glaze on all sides and nooks and crannies of the chicken. If you barely coat the chicken, it just won't have a lot of flavor, so don't be shy. Place in a 400 degree oven for 10 minutes. Serve immediately.
