- EASY BBQ SOUTHWESTERN CHICKEN 4 leg quarters (skinless) 1 cup bbq sauce (any flavor)(honey smoke perferred) 1.5 tsp of southwestern seasoning 1 tsp salt and pepper 1 tsp chicken fajita seasoning Skin 4 leg quarters Set oven to 400 degrees Marinate leg quarters in all ingredients for 15 minutes. Take a cookie sheet or flat sheet and a sheet of foil, and wrap leg quarters in foil, make sure no opening, seal it up tight. Cook for 45 minutes. When done spoon remaining sauce over chicken till glaze appears, then serve. Yummy!!!!!!!!!!!!!!!

- 4 chicken breasts 4 cloves garlic, crushed 1/2 cup good white wine 1 tablespoon dried chili pepper flakes, more if desired salt pepper Wash chicken breasts and pat dry. Pour the wine over the breasts and coat both sides with the wine. (You may need to add a bit more wine if necessary) Spice one side of the breasts with the remaining ingredients and then turn them over and spice the other side. Place in the fridge for at least 5 hours to marinate- overnight is better. Heat your BBQ and cook the chicken until done- don't overcook as the chicken may dry out.
- wash and lightly toss your chicken pieces in olive oil. season your chicken with seasoned salt, garlic powder, and black pepper. put the chicken on a low temperature grill and let it cook on both sides until browned and tender. baste/brush the chicken with your favorite bbq sauce and let it continue to cook for an extra 15-20 minutes until done.

BARBECUE FRIED CHICKEN 2 1/2-3 lb. broiler fryer chicken, cut up 1/4 c. flour 2 tbsp. cooking oil 1/2 c. chopped onion 1 clove garlic, minced 3 tbsp. lemon juice 2 tsp. salt 1 c. catsup 1/2 c. water 1/4 tsp. pepper Combine flour and 1 teaspoon of salt. Coat chicken pieces with flour mixture. Brown chicken in hot oil over medium heat, about 15 minutes, turning to brown. In a saucepan combine catsup, onion, water, garlic, remaining 1 teaspoon salt and pepper. Bring to boiling. Simmer for 20 minutes. Blend in lemon juice; add to chicken. Cover; cook over low heat 35-40 minutes or until tender. Serve with sauce. Serves 4.
