How do I soften grilled BBQ chicken breasts?
I usually use fresh chicken, but this time I tried frozen and as a result, the chicken pieces are cooked, but are now hard to chew. Can I fix this?

- sounds to me like you overcooked the chicken. the only way i know how to save them is to smother them. get a can of cream of mushroom soup and pour the soup over the chicken, along with a small amount of water and simmer it in a skillet with a lid on it for 20-25 minutes. you can throw in a few sliced onions and baby carrots too....sorry.

- Oh, man I hate that when it happens..... I think you might have over cooked the chicken breast. I agree with the 1st answer and I have in the past rehydrate chicken breast by soaking it in chicken broth/stalk mixed with BBQ sauce. You can do this by placing your chicken breast in a oven proof dish with chicken total submerged (covered) with a mixture of chicken broth/stalk mixed with BBQ sauce and heat at a low temperature for until thoroughly heated. Normally I use 250 for an hour or so. Hope this helps you out. Next time you might consider changing your cooking time or your temperature to insure moist chicken breast. - Beat the chicken with a little hammer before you cook it, not to hard, that way it will tenderize, then add a little seasoning and your done
- Happens all the time! Try putting the leftover chicken pieces in a baking pan with some crushed tomatoes, onions, garlic, italian seasoning and bake at 325 for about an hour or so. The chicken should fall apart in the sauce you made. Throw it all on top of some pasta and you've got a poor man's chicken cacciatore.
- yes over cooked for sure. use an instant read thermometer for gilling especially but for all your cooking you cant get the results you want from frozen. you have to thaw meat first before you cook it to preserve whatever texture is left. FRESH (never frozen) IS BEST FOR GRILLING.. (no exceptions that i am currently aware of. i'm not counting ready cooked food) Real chickens have mucles that (all you vegetarians look away) peel away from each other in layers.which you can dip frozen chicken can get mushy when thawed and doesnt give you the layers of texture you get in good bbq chiken. its just kind of homogenous in texture like tofu or something
