- When I make chicken, which I am really good at, I usually use this recipe. I really like it and so do my young kids. OVEN BAKED CHICKEN 2 egg whites, lightly beaten 1 tbsp. water 1 c. Nutri-grain wheat cereal, crushed 1/4 tsp. garlic powder 1/4 tsp. seasoned salt 6 boneless chicken breast halves, skinned Non-stick cooking spray Preheat oven to 350 degrees. Mix together egg whites and water in a shallow dish and set aside. Combine cereal, garlic powder, pepper and seasoned salt. Dip chicken in egg mixture and then in cereal mixture, coating well. Arrange in a baking pan coated with non-stick cooking spray. Bake for 45 minutes or until tender. Makes 6 servings. Hope I helped!
- Baked Ranch Parmesan Chicken 1ΒΌ hours | 20 min prep | Ingredients: 6 boneless skinless chicken breasts 1/2 cup ranch dressing 1 cup seasoned dry bread crumb 1/2 cup freshly grated Parmesan cheese 1 teaspoon fresh coarse ground black pepper 1 teaspoon ground sage 1/2 teaspoon salt 1/4-1/2 teaspoon garlic powder Directions: 1. Marinate chicken breasts in the ranch dressing for 4 hours or overnight. 2. I opted for overnight. 3. Preheat oven to 450 degrees. 4. Combine bread crumbs, Parmesan cheese, black pepper, sage, salt and garlic powder; mix well. 5. Remove the chicken from the ranch dressing and coat with the breadcrumb mixture. 6. Place in a 13 x 9 pan baking dish. 7. Bake for 20 minutes, then reduce heat to 350 degrees and bake for an additional 30 minutes or until done and juices run clear. 8. Time does not reflect marinading time.
- Many people smear the chicken with an herb butter paste, but I substitute roasted garlic for the butter. Take a clove of garlic, slice off the top so you barely see the cloves. Pour 1 T of olive oil on top, wrap in foil and throw in oven at 350 to roast for 20 mins or so, until soft. When cool, squeeze out soft cloves and mash. Mix in a little extra olive oil, black pepper, lemon juice, flat leaf parsley and thyme. Smear all over chicken and bake until cooked. If chicken still has skin on it, smear most of paste under skin.
