- Cheesy Potatoes- they are so good i feel so guilty passing it on. kind of a family thing my cousin and i love to make them. Alot of work but well worth it! I promise Ingredients: 8 Potatoes 1 stick of butter 1 bunch green onion 16 oz. sour cream 2 cans cream of chicken 1 lb. cheddar cheese Directions: Butter glass pan with 1/4 stick of the butter Boil potatoes with the skin, until they are 1/2-3/4 way cooked Then remove potatoes from the hot water, peel off the skin, and grate them into a bowl. Chop green onions, and place in a bowl. Mix the remaining 3/4 of a stick of butter (melted) and combine it with the sour cream, cream of chicken and the green onions. Mix in potatoes with the butter, sour cream, cream of chicken and green onions. Place potatoes in the glass pan that is buttered, and place enough cheese on top to cover the potatoes. Cooking: Bake the Cheesy Potatoes at 350 degrees, lightly covering the potatoes with tin foil- make sure the foil doesn't touch the top, so the cheese doesn't stick to it. Cook for one hour, and then take the foil off to make sure the cheese is melted and cook for an additional 10 minutes.
