Chook Me!

If making Chicken Stock can I mix uncooked wings & bones from baked chicken?

I want to make chicken stock. I have 2 wings in the freezer and baking chicken for dinner tonight. Does any one know if it is ok to mix uncooked meat from freezer and bones from cooked chicken to prepare stock? Or should I just stick to either one? Or has any one tried making chicken stock from cooked bones? Thank you in advance!

  1. Your stock will taste better if you bake or brown the uncooked meat before you add water and make stock.
  2. It's fine since you will be boiling/simmering the stock for a period of time and the chicken will be cooked. I've never made stock with cooked chicken before.
  3. As long as the stock comes to a boil. I'd boil the wings first, then add the cooked bones.
  4. You can combine uncooked and cooked bones to make stock, and yes, I have made stock from cooked bones. I have combined cooked bones and frozen raw chicken before, and my stock has turned out great. The min. simmering (not boiling) time for chicken stock is about 4hrs, so you do not need to worry about the raw aspect. Browning the bones does add to the taste, but is not necc., not roasting just gives you a lighter stock.
