- put on some evoo and spices
- Oh man. Tell me she did not just say "evoo". The best marinade for grilled chicken I've come up with yet is Buttermilk Ranch Dressing, a couple tablespoons of olive oil, 3 cloves of FRESH, minced garlic, chopped fresh cilantro, 2 chopped fresh jalapenos, salt, pepper & chili powder. TRUST ME PLEASE. It is so fabulous, it makes your chicken taste as good as steak. If that makes any sense. TIP: If you use pieces that have bones (like split breasts or thighs), please remember to pierce each piece a couple times w/ a fork or the end of a steak knife. Be careful & enjoy!!! :)
- Marinate your chicken over-night in a sealed baggie container using 1/2 cup olive oil, three fresh lemons, cut up, squeezed, seeded, (Throw in rinds and all), fresh herbs of your choice...I like basil and taragon... a couple of cloves of halved garlic, a dash of sea salt, a sprinkle of fresh ground pepper, and a couple of splashes of balsamic vinegar. Coat the chicken evenly. When ready to cook, remove chicken pieces and grill as usual. Great tasting chicken!! REALLY!!
- Italian Grilled Chicken Makes 8 servings Prep: 10 minutes Marinate: 24 hours Grill: 14 minutes Ingredients: 8 10-ounce skinless, boneless chicken breast halves 3/4 cup bottled Italian salad dressing Directions 1. Place chicken in a heavy plastic bag set in a large bowl. Pour salad dressing over chicken. Close bag and turn chicken to coat well. Marinate in the refrigerator for at least 24 hours or up to 48 hours, turning bag occasionally. 2. Drain chicken, reserving marinade. 3. Place chicken on the rack of an uncovered grill directly over medium coals. Grill for 8 minutes, brushing occasionally with marinade. Turn chicken and grill for 6 to 9 minutes more or until no pink remains and juices run clear. Serve with hot cooked rice. Makes 8 servings.
- One of the best marinades I know is equal parts of soy sauce and lemon juice. Add fresh minced garlic (as much as you like for taste), kosher salt and fresh ground pepper. Marinade at least 1 hour or can refrigerate over night. Use low sodium soy sauce if you're watching your salt intake. This works best on boneless, skinless chicken breasts. Yummy!!
- Weber has some pretty good recipes. The Greek Garlic Chicken looks mighty good. http://www.weber.com/bbq/pub/recipe/category.aspx?c=poultry This one is for chicken wings, but the marinade sounds yummy: Key Lime Barbecue Chicken Wings http://homecooking.about.com/od/chickenrecipes/r/blchicken35.htm - - - - - - - - - - There's always Beer Can chicken :-)
- Put chicken breast in a zip lock bag and pour Creamy Italian Dressing over it. Let it marinate for about 30 minutes and then put it on the grill. Don't use the marinate for dipping sauce. This is the most tender and tastefull chicken I have ever cooked.

- We like to season boneless chicken breasts with our favorite commercial rub (Durn Good seasoning), spray lightly with Pam for Grilling and then grill over a direct-medium fire according to the griling instructions we get on charcoalbob.com so that they come out nice and juicy. Then we like to put a little of our favorite bbq sauce in a dish to use as dipping sauce, just like you would shrimp sauce. Simple and delicious.
