- I love making chicken wings at home. I use my fish fryer out on the patio but you can do it on the stove in a deep pot. Cut your wings, separating the drums and flats. Unless you're into making chicken stock cut off and throw away the little ends. Rinse the wings thoroughly in cold water and allow them to dry. (I use my salad spinner!) Get your tools together. Deep pot, tongs or slotted spoon, large bowl, paper towels, cooking oil, cooking thermometer. Heat the oil to about 300 degrees. Carefully put the wings in the hot oil. It's gonna splatter so don't burn yourself...this is the reason for the deep pot. As they cook bring the temp up to 350. They should fry at 350 for 15-20 minutes, or until they are turning golden brown. Don't leave 'em in there too long because they will keep cooking (carryover cooking) after you get them out of the oil. Wing restaurants like to put butter sauce in the bowl, then the wings, and toss them. I don't like it 'cause it's too greasy. As soon as the wings go in the bowl hit 'em with the salt and pepper and toss 'em around to get the spices all over the wings. (I like lemon pepper best.) Enjoy with lots of paper towels and the beverage of your choice.
