simple and healthy chicken recipes?

I dont have a grill, just pans ans pots. also dont have alot money for expensive ingredients. I have frozen chicken breast.

  2. Frozen split chicken breast with the bone in & skin on? Or frozen chicken breast cutlet? This is generic, simple, and delicious. Thaw the chicken. Put 1 tablespoon extra virgin olive oil and 2 tablespoons balsamic vinegar in a small container and shake to blend. Pour the marinade over the chicken breast or the cutlet and roll the chicken in the marinade so it's well coated. If you're going to have a green salad or there is something else to prepare, do the other task while the marinade works on the chicken for 15 to 30 minutes at room temp. Take a small skillet, spray with nonstick spray, turn the stove on to med-high, sprinkle a very very little garlic salt on one side of the cutlet or the skin side of the breast, and put the cutlet or skin-side-down chicken breast in the skillet. I keep a lid handy, keep the heat at med-high reducing as necessary, and add water to facilitate the cooking, just a little. In a non-stick pan coated with non-stick spray, the balsamic vinegar/olive oil mixture becomes thick like a sauce, and essentially when you add water, you are cooking the breast in a very savory sauce. Obviously cooking times will vary for a bone-in breast and a cutlet. If there is any marinade left, I often add it when the cooking is just about done. I don't know if this breaks any cardinal rules, but it just makes the sauce darker and delicious. IF it's a cutlet, I often remove it from the pan, slice it in 1/2 inch pieces, then return it to the pan to really absorb the sauce, and I then put it on top of an enormous green salad. Or leave it whole and have it with brown rice and a vegetable stir-fry.
