Name them: Bovine, ovine, porcine, poultry, piscine, rodent.. horse? I agree about the wording of the question, it is vague.

  1. First you have a problem... what you are listing are not species, they are broad terms that are used for a group of species. Kinda like how one can use the term "cat" to include, domestic cats, tigers, lions, leopards, jags, etc. If you are being broad, on both the type as well as what one considers "meat" I would say the following... cow, pig, chicken, fish, crustaceans (lobster, crab), goat, lamb. From there you are going to get into more area specific diets. For example horse, rodent, cat, dog are eaten on a common basis but only in specific areas of the world.
  2. Cattle, sheep, pigs, chickens, fish (many species) are the main meat sources. Other sources are much less: horses, camels, goats, ducks, dogs, cats, guinea pigs, rabbits, whales and dolphins. Also deer and reindeer. Rats and mice are a very minor source.
  3.
