Help me with an easy chicken recipe please?

I am not much of a cook, to be honest I burn boiling water and I only know 2 casseroles that I can actually cook without burning. I need a recipe for chicken that has VERY easy steps (preferably not too high in calories and not too many ingredients to add Oh and a short amount of cooking time, maybe 30 minutes) that I can follow that also goes alongside a fresh salad.   1. I find the quickest way is to bring chicken pieces to the boil and then simmer it until it is tender. Drain and season to taste. You could allow it to cool a little and shred.

I can't tell you how long or what setting the temp should be (because I totally suck at cooking and play it all by ear or eye), but I marinate chicken breasts in Italian dressing and cook in the broiler for like 20 mins or so. Comes out great. Puncture the breast with a fork while it is soaking in the marinate.

Quick, Easy -N- Fast Chicken Strips Recipe 4 skinless boneless chicken breasts 1 beaten egg 1 T. dijon mustard 1 T. water 1/4 C. flour 3/4 C. dry seasoned bread crumbs 2 T. vegetable oil 2 T. butter 1/2 t. lemon pepper seasoning salt to taste Cut each chicken breast in 6 pieces. In a small bowl, mix together egg, mustard and water. Add the flour and lemon pepper together on a plate. Place the breadcrumbs on another plate or wax paper. Dip the strips in the flour, then the egg and the breadcrumbs. Repeat until you have coated all the chicken. In a 12 inch skillet add the oil and butter. Add the chicken and brown on all sides. It should take about 6 minutes. Season with salt. Serve with your choice of dipping sauce or ranch dressing. Serves 4. Variation: Add 1/3 C. finely chopped pecans or sesame seeds to the breadcrumbs. Quick, Easy -N- Fast Sautéed Chicken with Lemon Garlic Sauce 1 T. olive oil 1 garlic clove, minced 2 chicken breast halves salt, pepper 1/2 C. chicken broth 1/2 C. pitted kalamata or other intensely flavored olives 1 T. lemon juice 1 C. cooked rice, optional Heat oil in medium skillet. Add garlic and saute over medium heat 1 minute. Add chicken, seasoned with salt and pepper to taste, and brown 5 minutes per side. Remove chicken. Pour in broth and scrape up any browned bits. Return chicken to skillet along with olives. Cover and simmer 30 minutes. Remove chicken and keep warm. Add lemon juice and cook down liquids by a third. Return chicken to pan to heat through. To serve, spoon chicken and skillet sauce onto each of 2 plates. Serve rice on the side. Makes 2 servings.
  4. This is great and super easy. Any chicken parts work, not just wings. BBQ Party Wings Ingredients: • 2 pounds Chicken Wings (folded) • 1 Bottle Demon Pig BBQ Sauce • Demon Pig BBQ Rub • Spray Margarine Directions: Rinse and dry wings, folding and locking tip. Spray wings with pump spray margarine and coat with Demon Pig BBQ Rub. Bake on sheet pan 45 minutes in preheated 350 degree oven. Remove to crock pot or covered baking dish. Coat with Demon Pig BBQ Sauce and cook for one hour on high. Reduce to low, stir and serve. To finish in conventional oven - bake at 350 degrees, when covered and sauced. Reduce heat to 250 to finish. Notes: Any flavor of Demon Pig Sauce works with this recipe. Blaze Orange is my favorite. It can all be done in the oven.

Chicken parmesan is pretty easy and fast to make =) 4 boneless chicken breasts, pounded to 1/2 inch thickness 1 egg 1/2 cup milk seasoned bread crumbs 2 to 3 tablespoons olive oil 8 slices mozzarella cheese, or more 1 jar (16 oz) spaghetti sauce Parmesan cheese PREPARATION: Whisk together the egg and milk. Dip the chicken breasts in milk and egg mixture and then in bread crumbs. Heat olive oil in a large skillet over medium-high heat. Brown the chicken in the hot oil on both sides until golden, about 3 to 4 minutes on each side. Take chicken from pan and place on papers towels for a min to drain any grease and then set chicken in a baking dish. Slice 8 pieces of mozzarella cheese and put two on each chicken breast. Pour 1 jar of your favorite spaghetti sauce over all. Sprinkle with Parmesan cheese and a little more mozzarella and bake at 350° for about 25 to 30 minutes, or until bubbly. Optional.... You can boil up a pot of spaghetti when the chicken parmesan is about done, then drain it and serve with the chicken parm and salad. Have a Great dinner =)

Try this one I call it Mediterranean barbecue chicken (quantity is for 6 servings) INGREDIENTS: 6 boneless, skinless chicken breasts 1 tablespoon olive oil 3 cloves garlic, chopped 1 can (6 ounce size) tomato paste 1 can (14.5 ounce size) reduced sodium chicken broth 2/3 cup balsamic vinegar 2 tablespoons honey 4 green onions Salt and pepper to taste PREPARATION: Barbecue Sauce: Wash and slice green onions, white bottoms only (discard green tops) Mix garlic and white parts of green onion to a skillet and sauté for 2 minutes. Stir in tomato paste and chicken broth and mix well. Increase heat to medium-high; add vinegar and honey and cook to boil. Reduce heat to low, and simmer until sauce is reduced, about 30 minutes. Bring sauce to room temperature. (Can be prepared the day before and kept in refrigerator). Chicken: Put chicken in small bowl and cover with sauce for about 2 hours. Place grill over medium heat, and grill chicken breasts for about 3 minutes. Turn chicken over, coat liberally with remaining sauce, and grill for a further 3 minutes or until done.
  7. Ok - since you are not much of a cook, you can go the easy way : Buy a bag of frozen Wok veggies. Fry sliced chicken fillets in a pan, and add the wok veggies. Season it with Chinese soy sauce, some hot sweet sour chili sauce, salt and pepper. And then its ready to eat! If you want to, you can eat it like that (healthy and not much calories unless you used a whole lot of the hot sweet sour chili sauce), or serve it with cooked noodles or rice. Quick and easy...! Or - you can buy one of Uncle Ben's already made sauces (there are several to choose from...!) and mix it with fried chicken... You can't go wrong with that - and it is delicious.
  8. Here is the recipe for one of my families favorite dishes. Cook one whole chicken. When done let cool and take all chicken off the bones and dice into small pieces. mix the chicken with one can cream of chicken soup and 8 oz. of sour cream. Put into well greased 9x9 baking dish. crush about one and a half tubes of ritz crackers and place over the chicken mixture. Then dice one stick of margarine into pieces and place over the crackers. Put into a 350 degree oven (uncovered) for about 30 to 40 minutes or until crackers start to turn brown and chicken mixture starts bubbling around the sides of the dish. You can either boil your chicken or put it in the oven for about an hour or so. I usually save the broth to make gravy. It is so good over the casserole. When you make this you have to forget about the calories. I have given out this recipe so many times I know it by heart. I have taken it to many carry in dinners and such and everyone always loves it. Try it I'm sure it will become a favorite of your family also.
