- My husband just invented a really easy recipe that tastes great, too... he calls it "concoction"... he cooks up a chicken breast, steams some broccoli and some red peppers and mushrooms, and puts it all over a bed of brown rice with some soy sauce. I prefer my chicken from KFC.

- Chicken Curry 1 Durkee Chicken Roasting Bag With Gravy 1 Cut up chicken or parts of your choice 1 Can cream of chicken soup Curry to taste about 4 tablespoons Put chicken parts in roasting bag. Put cream of chicken soup in a bowl and mix with some milk so it has the thickness of gravy, mix in the packet of gravy mix, curry, blend well. Pour this mixture over the chicken in roasting bag and bake according to directions on the roasting bag. Serve over rice, with your favorite vegetable or salad.
- Cut boneless skinless breasts in strips & stir fry with pepper & onion strips and some salsa...wrap in tortillas for fajitas. Stir fry in garlic & soy sauce, add frozen stir-fry blend & serve on rice (or break up ramen noodles & throw in with some water). Bake chicken pieces in a half-water, half soy sauce mix....this sounds weird but is VERY tasty....bake at 400 until fully cooked, turning once. Marinate chicken cubes in Italian dressing, thread on skewers with pepper, onion, mushrooms, and cherry tomatoes for great kabobs on the grill. Pour melted butter over chicken pieces in a baking dish, then lightly sprinkle with taco seasoning & bake.
- Chicken soup or chicken-noodle soup 1/2 of an onion (doesn't matter what kind) 4 celery sticks (you can add more if you think you should) 4 carrot sticks (the big ones and you can add more if you can) either 4 red potatoes or noodles (use one or the other, if you use noodles cook them before and put them into a salad bowl with like glad press and seal covering it) 1 hole chicken 2 bay leaves, as much oregano, parsley, and basil that you think is good enough, and a pinch or salt and pepper you can make your own stock, or use a grocery bought stock and you need a big pot. cook for about thirty min. or longer if the vegetables are not fully cooked. enjoy!

- Chicken Casserole 6 boneless skinless chicken breasts 1 can cream of chicken soup ¾ cup water Swiss and/or American cheese slices Pepperidge Farm stuffing (small blue bag) ½ cup margarine Line 13x9 pan with chicken. Mix soup and water. Pour over chicken. Cover with cheese. Pour stuffing on top. Melt margarine and pour over stuffing. Bake uncovered for 1 ½ hours at 300 degrees. Chicken and Rice Casserole 2 cups cooked cut up chicken 1 cup cooked rice ¾ cup mayonnaise 1 cup fresh sliced mushrooms 4 oz. water chestnuts (can use whole 8 oz. can if you like them) 1 t lemon juice ¼ cup onions 1 can cream of chicken soup Mix and put in 4 quart dish. Top with crushed corn flakes, dots of butter and almonds. Bake 35 minutes at 350. Chicken with Cheese 6 boneless skinless chicken breasts ½ cup onions 1 can cream of mushroom soup 1/8 cup sherry or red wine ¼ lb. grated cheddar cheese Place chicken in baking dish. Add onions. Mix soup and sherry and pour over chicken. Sprinkle cheese on top. Place in 350 oven, COVERED, for 45 minutes. Uncover and continue baking for 35 to 45 more minutes. Salt and pepper to taste. Pollo Don Giovanni 2 boneless skinless chicken breasts 1 - 2 T olive oil ½ cup chopped carrots 1/3 cup chopped celery 1/3 cup chopped onions 1 cup white wine 1 t chopped parsley Salt and ground black pepper to taste Hot cooked rice or pasta Sauté chicken in olive oil until brown. Add carrots, celery, onions, wine and parsley. Cook until carrots are tender, chicken is done and wine is reduced to about half, about 12 to 15 minutes. Season to taste and serve over pasta or rice.
