any good diet recipes using grilled chicken and veg?

no rich sauces etc. it's for a low carb high protein diet, I can use a little olive oil and any spices and veggies

Yields: 4 main-dish servings Prep Time: 15 minutes Cook Time: After marinating for 15-30 minutes, grill for about 10 minutes. Total Time: 55 minutes Ingredients 1 lemon 1 tablespoon olive oil 1/2 All Spice or Ms. Dash 1/4 teaspoon coarsely ground black pepper 4 medium skinless, boneless chicken thighs (about 1 1/4 pounds) 4 medium yellow summer squash and/or zucchini (about 6 ounces each), each cut lengthwise into 4 wedges 1/4 cup snipped fresh chives Grilled lemon slices for garnish Directions: 1. From lemon, grate 1 tablespoon peel and squeeze 3 tablespoons juice. In medium bowl, whisk together lemon peel and juice, oil, spices, and pepper; transfer 2 tablespoons to cup. 2. Add chicken thighs to bowl with lemon-juice marinade; cover and let stand 15 minutes at room temperature or 30 minutes in the refrigerator. 3. Meanwhile, prepare charcoal fire or preheat gas grill for covered direct grilling over medium heat. 4. Discard chicken marinade. Place chicken and squash on hot grill rack. Cover grill and cook chicken and squash 10 to 12 minutes or until juices run clear when thickest part of thigh is pierced with tip of knife and squash is tender and browned, turning chicken and squash over once and removing pieces as they are done. 5. Transfer chicken and squash to cutting board. Cut chicken into 1-inch-wide strips; cut each squash wedge crosswise in half. 6. To serve, on large platter, toss squash with reserved lemon-juice marinade, then toss with chicken and sprinkle with chives. Garnish with grilled lemon slices. Based on individual serving.   2. how many ya want? 1. Cut up chicken for kabaobs brush them with a little olive oil sprinkle with garlic salt. 2. Stir fry chicken add veggies use cooking spray add garlic soy sauce or a asian glaze 3. Add BBQ sauce to chicken toss veggies with olive oil, garlic salt and if you can find it a sundried tomato rub asaute veggies or put them in foil and grill w/ chicken 4. Marinate chicken and veggies in your favorite vinegrette salad dressing and grill or saute 5. Use teriyaki glaze brush on veggies add pineapple to veggies.

Garlic Grilled Chicken Skewers Boneless skinless chicken - breast, thighs, or tenders. 1 cup salsa 2 tablespoons vegetable oil 1 tablespoon lime juice 2 garlic cloves 1/2 teaspoon salt or "to taste" 1/2 teaspoon ground cumin 1/2 teaspoon oregano Plastic bag or marinator Skewers PREPARATION: 1. Pound out the chicken until it is 1/2 inch thick and cut it into 1-inch wide strips. 2. Place chicken and all the remaining ingredients into a plastic bag or marinator, express the air from the bag, mix well. Refrigerate 1-2 hours and turn/mix it every 15 minutes. 3. Drain the chicken, saving the marinade. 4. Thread the chicken onto skewers. 5. Place the chicken on the grill or broiler rack, brush with the marinade. 6. Grill 6-8 minutes, turning and basting with the marinade, until cooked through.   4. My husband is on a low-sodium diet and this is what I do... I get boneless, skinless chicken breasts and use pam in a frying pan (I like the olive oil spray one). I brown each side for about 5-7 minutes each. I add in onions and green peppers and sometimes red peppers. I add about 2 cups of water and cover the pan with a lid. Turn it on low-medium for about 20 minutes. (I season the chicken before I fry it, with all Mrs. Dash, onion or garlic powders, etc...). Since you are on a low carb, you may not want to serve it with rice or pasta - it will work on its own. This is great because it isn't dried out, nice and moist with a good flavor. Leftovers are great for salads the next day. Very easy.
  5. i like to thinly slice chicken breast and saute it with olive oil and onion..a little soy sauce and add veggies with a little garlic salt. and serve on white rice. its really easy and i have been losing weight. another thing i have been eating is, fresh chopped strawberries with a dash of sugar, mix well. add some dannon low fat vanilla yogurt..mix well and its almost like eating strawberries with cream, with bare naked granola...its sooo good. just a tip!!
