Grilled Chicken Alfredo?
Does anyone have a good and easy recipe for Grilled Chicken Alfredo? Help please!

- Preparation - Medium Prep: 15 min - Cook: 60 min (to cook chicken) Serves 8 You can vary the taste of this dish by the way you cook and add the chicken.The chicken breasts can be grilled and served on top of, or beside the Fettuccine Alfredo, or cut in morsels, sautéed or grilled until just done, then mixed with the fettucine and sauce at the end. My favorite is chicken grilled on charcoal. Another variation is adding a sprinkling of Parmesan cheese and finishing in the oven. You can also (optionally) add steamed broccoli florets and/or sautéed, diced red pepper. You can use fettuccine, taglietelle, mostaccioli, penne or farfalle pasta. Once your chicken is cooked, you can procede with cooking the pasta and preparing the sauce at the same time. Tastes best if you combine pasta and sauce when they are just ready. * 2 skinless chicken breasts, cut in slices about 1/4 " thick then in bite-size morsels * 3 - 4 leaves of sage * 1 cup broccoli florets, steamed (optional) * 1 red pepper, seeded, coarsley diced, sautéed in olive oil or butter (optional) * 8 oz pasta (fettuccine, tagliatelle) or 12 oz (3/4 package) penne, etc. (fettuccine is heavier). * 4 tablespoons unsalted butter, at room temperature (or 2 of olive oil for sauteeing the chicken and 2 of butter for the sauce) * 1 cup freshly grated Parmigiano Reggiano (Parmesan), at room temperature, plus extra cheese to pass at the table * 1 1/4 cup heavy cream or Half and Half (or 1/2 of each) * salt and freshly ground pepper (use white pepper if you have it) * a pinch of grated nutmeg OO Pasta pot; pan large enough to hold all ingredients and pasta. SET the pasta water to boil in your pasta pot. IN the large sauté pan large enough to hold all the ingredients, sauté the chicken in 2 tablespoons of butter or good olive oil until lightly browned. Set chicken aside on a warm plate. ADD the pasta to the boiling water in the pasta pot. Remember to reserve some of the cooking water to moisten your chicken Alfredo if it is too dry. IN the sauté pan: ADD the heavy cream, 2 tablespoons of butter and 1/2 cup Parmesan cheese to the same pan. Keep cooking on low-medium heat, stirring occasionally until the mixture reduces slightly and thickens. ADD pinch of nutmeg, 3 - 4 leaves of sage, salt and pepper to taste. Stir. ADD the cooked chicken and optional ingredients and mix again. Taste for salt. Add a TBSP or two of the pasta cooking water if too dry. ADD the cooked and well-drained pasta to the sauce. Mix well with a wooden spoon. TURN into a warmed serving bowl, or directly onto warmed plates. VARIATION: Turn pasta mixture into a baking dish, sprinkle 1/2 cup Parmesan cheese on top, and set under broiler for about 30 seconds, until flecked with brown.
- EASY ALFREDO SAUCE/ WITH GRILLED CHICKEN For an even easier task you can forget the first 7 ingredients and get a jar of pre-made Alfredo sauce and have 1/2 less work. I grill my chicken and have it resting before I started my sauce. Ingredients 1 Stick unsalted butter 3 oz. cream cheese(room temp) 2 Tablespoons flour 1 cup fat free half and half 1/2 cup grated parmesan cheese salt & pepper to taste 1/2 large sweet onion/diced 1/2 pkg fresh baby spinach 1/2 pkg fresh mushrooms(cut in small pieces) 1 teaspoon minced garlic 2 Tablespoons olive oil 1 pkg fresh fettuccini, cooked 2 large bone in, chicken breasts 2 Tablespoons olive oil salt and pepper to taste Prep: Before cooking the sauce, sprinkle salt, pepper and olive oil on chicken breats and grill. Allow to rest and remove bones and cut into bite size pieces. Saute onions in olive oil until clear, add mushrooms and garlic and continue sauting about 5 minutes still over low heat, add spinach and cook until it is wilted. Remove and set aside for later. In a sauce pan melt butter over low heat( do not burn or it will have a nutty taste), with a wisk, mix in the cream cheese and wisk until combined. (At first it will seem like it won't combine, but keep stirring until you do)Once you have the butter and cream cheese mixed pour in the half and half, the flour and continue to wisk. Once the mixture heats up and the cream cheese mixture and milk have combined into a smooth cream, add salt, pepper and parmesan cheese and stir until combined. Let sit for a few minutes to thicken. Cook your fettuccini, by following directions on package. Drain. To assemble, add the spinach and mushroom mixture to the alfredo sauce and reheat on low for a few minutes. Add the chicken and alfredo sauce to fettuccini and toss until all noodles are coated.
