Oven Baked Chicken Tenders/Strips Help before dinner tonight! please?
I have a recipe for oven-baked chicken tenders/strips. The recipe calls for using Honey Bunches of oats cereal- and I forgot to get some at the grocery store and have none in the pantry. Can anyone suggest a similar recipe? Or a substitution? I wanted to try a recipe with something other than bread crumbs for the coating this time! Thanks-

- use cornflakes but make sure you crumble them.. some stores sell the box already crumbled.. this tastes better then the honey bunches of oats

- Ingredients serves 4 1/3 cup all-purpose flour 1 large egg, lightly beaten coarse salt and ground pepper 4 cups crisp rice cereal 2 tablespoons olive oil 1 1/2 pounds chicken tenders (tenderloins) 1/2 cup reduced-fat sour cream 2 tablespoons Dijon mustard 1 tablespoon honey 4 medium carrots, cut into sticks 1 cucumber, halved lengthwise, seeded, and cut into sticks Directions Preheat oven to 475. Place flour in a shallow bowl, and egg in a second one; season both with salt and pepper. Pulse cereal and oil in a food processor until fine crumbs form. Season with salt and pepper; transfer to a third shallow bowl. Coat chicken: first in flour, shaking off excess; then with egg, letting excess drip off; and finally in cereal mixture, pressing to help it adhere. Place on a baking sheet, and bake until light golden brown and cooked through, 10 to 15 minutes, turning over halfway through. Meanwhile, in a small bowl, mix together sour cream, mustard, and honey; season with salt and pepper. Serve tenders and vegetables with creamy honey mustard on the side. or Oven Fried Chicken Tenders Ingredients 1/4 c Pecans; Chopped 1/4 ts Pepper 2 c Toasted Corn Cereal; Crushed 6 Boneless Chicken Breast 1 ts Salt 1/4 c Olive Oil 1/2 ts Chile Powder Instructions for Oven Fried Chicken Tenders Place pecans in a small microwave safe bowl. Microwave on high for 1 1/2 to 2 minutes to toast. In medium bowl, combine crushed cereal, toasted pecans, salt, chile powder, and pepper; set aside. Cut each chicken breast into 4 tenders. Dip each chicken tender in oil, then coat with seasoned cereal crumbs. Place tenders in well-greased 9x13 inch glass baking dish. Bake in 350 degree oven for 25 minutes.
- Do you have any other cereals that are flakes? Combine any flaky cereal crumbs with fresh parmesan cheese. I know you said no to breadcrumbs, but if that was because it is not original, try bread crumbs with fresh grated parmesan cheese
- Just go to allrecipes.com, or foodnetwork.com, or yahoo food recipes..............that would be the best.........if you don't have the correct ingredient for baking the tenders they may turn out tasteless and dry, I'd look for a difference recipes at these sites........they are very easy..............
- Cornflakes are fine. You can also use things like Ritz crackers, which work pretty well. If you want to make things a little more interesting, add some dried parsley and/or parmesan cheese to the mix.
